One of the newest restaurants at the Bellagio, Yellowtail Sushi will have to compete with some of the big name sushi spots already in place. Already being compared to Nobu and Sushi Roku, Yellowtail just might be one of the new favorites when it comes to the raw cuisine that Las Vegas just can’t get enough of. The entrance to restaurant will give a hint as to what’s inside. The structure was built to resemble scales of a fish and is cast in bronze, for added allure. Just like its predecessors, Yellowtail promises more than a sushi bar, but an entire ultra-lounge experience which will offer an exclusive reservations only atmosphere for food VIPs. Fresh fish and other ingredients will be flown in daily not just from Japan, but from all over the world. A large hand-selected sake list will compliment any of the cuisine at Yellowtail.
Executive chef Akira Back will feature dishes like sashimi with caviar and micro greens, grilled Walu fish, Maine lobster carpaccio, and other colorful culinary creations. Chef Back has trained under some of the greatest sushi chefs of all time. Learning from Nobu and Morimoto, Back has created a menu that is completely Japanese and traditional yet still interesting with a plethora of surprises. Like most restaurants at the Bellagio, Yellowtail will offer beautiful views of the famous fountains from an intimate outdoor patio. There is also a private dining room which can hold up to 30 guests for private events as well as a sake bar with seating for 18. Yellowtail also offers a nightlife experience that is much more upscale, relaxed and more refined than any club in Las Vegas.
